Does a singular or plural nouns/pronouns affect the way the subject is determined?

If the sentence is: Some bad kids took the old man's wallet. Does it mean that "bad kids" is the only subject or a simple subject even though it is in a plural form?

And if the sentence is: They went to visit a dog cafe.
Is it only a simple subject?
