This is very possible. It makes a lot of sense. The mask roxy wears is definitely significant and help wanted 2 spelled it out for us.

I definitely think her mask is like Cassie’s mask, it allows her to see via the AR world and contains the last node. It might allow limited sight in real life as well. I think they tried to replace her casing panels but they got busted from running around.

Also, I don’t think that Cassie’s dad is dead. He was probably working on the Help Wanted 2 program to qualify for Fazbear Entertainment franchisee status or executive level membership.

She could've got under the fork lift via audio lures. Remember that you have to use audio lures to make Roxy break open certain doors in Ruin. The mimic or Glitchtrap could use these pre recorded voice snippets to take advantage of Roxy's blind fury and make her crash into the container the vehicle was stored in, causing it to fall onto her. The audio lures are part of the camera system, something corrupted by Glitchtrap's presence since security breach, some cameras are even AR ONLY to access meaning the Vanni mask and the influence upon it are needed to use these, just as they can help you get a secret ending, what else are they usable for? How does the Mimic know Cassie is nearby even when radio contact has been impossible? He's had eyes in the cameras via the Vanni network. Vanni uses nodes(helpi says so before implanting one in Cassie.)just like M.X.E.S so it should be reasonable for them to share a common connection in the pizzaplex. The Mimic is able to use the Cameras once you open them via your Vanni mask and uses the lures to trick and trap Roxy. Explaining the convenient 'Shutdown' opportunity afforded to Cassie.

Given Roxy is a robot that can walk around, no one would probably expect a robot to have a security node?
My question is, why wouldn’t Vanessa and Gregory try to destroy the mimic instead of locking it away?

When looking at The Mimic and seeing everything he does, he’s very strong and durable for being old. Not to mention the game files calls The Mimic “Old Endo”. He pushes over the forklift like it was nothing, when the elevator closes on mimic, his head dents the door instead of his head being crushed like how Chicas head gets crushed. Not to mention Mimics left hand crushes the metal bar after he intentionally breaks off his right arm to free himself.

This mimic could be the one from the epilogues, but given it doesn’t have the antennas as described in the book, it could be the mimic endo that Edwin made in the story, The Mimic. Given Edwin isn’t far off from being Henry, this robot is probably something that was locked away a long time ago?
