That looks absolutely GAS! Simply done but no corners cut. This man just gets IT. Knows when to use an oven to finish and when excess time on the grill does nothing but prolong cook times and increase the risk of drying out your bird… Cheers as always, Chef!

I'm 26 year old and grew up in Pierrefonds; Vivaldi has been part of my neighbourhood for as long as I can remember. In fact, I was there not too long ago for a big family dinner after a wedding rehearsal. Shocked -- and pleased -- to see they've garnered such a massive online following!
