Fennel, Beetroot and Orange Winter Salad

This is a really easy dish but don't let that trick you, all the flavours work so well together it really is an exceptional dish. The key is to get the root veggies cut really fine, so it's a good chance to practice those knife skills. If you don't have walnut oil, toasted sesame would make a good alternative. Remember to season it with some high quality sea salt and leave it all to marinate before serving.
