Pumpkin seeds don't have to be a boring snack only eaten in October. This dressing recipe uses roasted pumpkin seeds to add body and nutrition to any salad. With the addition of green chiles and cilantro, this pumpkin seed dressing is delicious and fresh whilst having a Mexican-inspired flavor.

Ingredients
• 1/4 cup roasted pumpkin seeds
• 12-15 cilantro stalks
• 1 cup of mayo (try it with the plant-based oil-free mayo)
• 1 tbsp lemon juice
• 2 tbsp canned green chiles (mild)
• 1 garlic clove
• 1/2 tsp salt
Instructions
• Blend in high-speed blender until smooth.

Serving suggestion
Pair up with a lettuce, kale, tomato, corn, pepper, and red onion salad and garnish with crushed organic blue corn chips for a Mexican twist.
