I've noticed that many traditional recipes are being forgotten or changed to suit personal tastes. As a chef, I really value these heritage recipes from each province because they reflect our culinary culture and help pass down our traditions.

With the holidays approaching, I encourage you to try my Arroz Valenciana recipe. I’d love to hear what you think!

Ingredients:

4 cups Malagkit rice, soaked
1 cup Water
1 tsp. Turmeric powder

Oil, for sauteing
¼ cup Onions, minced
5 cloves Garlic, minced
¼ kg. Pork, diced
¼ kg. Chicken, diced
1 pc. Chinese sausage, sliced
3-4 pcs. Laurel leaves
Salt & pepper, to taste
¼ cup Raisins
3 Tbsp. Tomato paste
150g. Chicken livers

4 cups Boiling water
1 pack Maggi Magic Chicken Cubes

Fish sauce, to taste

1 pc. Red bell peppers, diced
1 pc. Green bell peppers, diced
1 cup Green peas
(set some aside for garnish)

5 pcs. Hard-boiled egg

I used saffron.raisins add some sweetness. One time I used dried cranberries. It worked. My mom added sweet peas. You can add olives in lieu of fish sauce. 👌👌👌👌

I have the same ingredients minus the tomato paste and instead of maggi stock I used coconut milk, slow cooked for 15-20 mins then baked for 30-45 mins. It's what I learned from my tito in Pampanga. But I want to try this version of chef tatung, slow cook lang and no need to bake❤

Brings back my childhood years in Sanjuan I remember my Tita cooking Valenciana during special occasions...there is also Beef Morcon, Steamed Lapulapu, and Sotanghon Guisado...fondest memories....

Very true pwede yan ang base recipe mo if you add a different ingredient nagtransform sya into a different recipe.
Minsan lang ako nakakatikim nyan tuqing espesyal na okasyon lang. Masarap yan lagyan ng spanish sausage or fried pork or chicken 😊😊😊😊
