Ingredients:
~ 2 Cups Cornmeal mix
~ 1/4-1/2 Cup Self-Rising Flour
~ 1 Egg
~ 1/4 Cup Vegetable oil
~ 1 Cup Buttermilk
~ 1 Tablespoon Mayo
~ Splash of water

An elderly woman from church, Big Mama was what we called her, showed me first how to make Cornbread when I was 12 years old, loved her and watching her move about her kitchen, she could cook! ALWAYS get your iron skillet piping hot with lard in it so the cornbread starts cooking as soon as you pour it in, delicious! I'll try this, adding mayo!

We had cornbread at least twice a week when I was growing up. When it splits you just fill it up with butter and cut along the split. We usually had ours with beans and buttermilk.

I love that you're using a beautiful cut glass bowl for a mixing bowl! I have so many, but only ever use them as serving dishes for holidays. I'm totally gonna break those suckers out and start using them more often.

Cornbread with tender mustard greens, pot liquor and vinegar pepper-sauce...fresh black-eyed peas cooked with fat back...potato salad...fresh tomato slices...yum yum give me some. Right NOW! I will try the cornbread with mayo in it.
My former DIL always added mayo to her mashed potatoes and whipped them up in a crystal bowl using a hand mixer. I would hold my breath each time but I never said a word. I am confident that she still loves me yet even after 20+ years...lol!

My Mom made her cornbread in a cast iron skillet on the stove top over a gas stove with a lid on the skillet. She would flip it about halfway through and continue to cook it. She never added sugar to her corn meal, either. Her family was from the mountains of North Carolina. It was the way they'd always made it. If there was any left over, the next day she would break it up, put it in a glass and pour milk over it to eat it.

My mom grew up very poor and made cornbread with cornmeal from her uncle’s gristmill, some kind of oil (likely melted lard), some salt, and enough water to give it the right consistency; baked it in a hot cast iron skillet. I don’t remember ever seeing anything electric in the sharecroppers house my grandmother lived in when I was very young - just a huge old wood-burning stove for heat. Water came from a hand pump on the back porch outside the kitchen. When I stayed with my grandmother, we went to bed at dark and got up with the chickens. All this to say that I’m not really sure how the cooking was done - especially baking - but she had a wood cook stove in a later house and to the best of my recollection, she cooked everything on it.My grandmother used to say “take a big bite of bread and a little bite of something to eat.”

I have my mothers bowls that look very similar to yours. I never use her glass bowls that I have, they sit in my cabinet unused. After watching this- I wonder why have them if I am never going to use them? I may get them out this weekend & whip something up in a couple of her glass bowls. She would probably smile down from heaven seeing my use them. 😇

Good. Morning all from S.E.Tex. yes been using Mayo in our corn bread all my life. I'm now 80. Mayo, can also be used as egg sub .for many things we cook. Comes from old ww2 cook book handed down to me. Love it.very handy. Love your videos watch all the time

Jiffy Cornbread Mix (box)- simply double the eggs and double the milk that it calls for. Generously butter your pan, pour the batter in, generously butter when it’s done. Comes out almost like a cake- so yummy and moist. Also you can add a block of cream cheese- cut into small cubes (if cubes are too heavy they’ll sink to the bottom), gently fold into the batter before pouring in buttered pan, bake as directed. 👍

I had a thought today and I haven't heard anyone mention it. Here it is, if you have small children you should stock up supplies for them as well to keep those little minds and hands busy. Stock up - crayons, markers, coloring books, word search, pencils, paper and lots of children's books to read. Have a few new toys to surprise them with when all else fails or on their birthday. If you can pick up some educational supplies for homeschool.

I have always put Mayo or Miracle Whip in my cornbread. Always comes out moist and delish. I never measure it and just put a big dollop in it. More than a tablespoon for sure. Try using lard or bacon grease or butter in the bottom of your skillet! Makes a nice crust and doesn't stick!

I've always made cornbread in the cast iron skillet...SO much better !
I put the skillet into a cold oven, with 1/2 stick of butter and turn the oven on . By the time the oven reaches temperature, the batter is made . My "trick" is to tilt the pan, so the melted butter flows to one side, then add the batter . A shallow spoon is used to float the entire top of the batter with the melted butter ! The batter begins immediately to cook against the hot pan and the result is crispy outsides and yummy buttery goodness throughout !!! Oh ! I DO like food !!!

I grease my pan with crisco and sprinkle cornmeal on bottom and sides, like greasing a cake pan. This makes the outside extra crunchy. Your cornbread looks delicious.

I make a homemade "Jiffy" cornbread mix and add 1 small can of cream corn folded in at the end. It makes the cornbread so moist and yummy. It never fails. Just have to bake a little longer 5-10 min depending on if you are doing muffins or skillet. 😋🌽

This cornbread looks amazing and I am certainly going to make some. For anyone that can't get the Three River's cornbread mix, it is actually made by White Lily which is what I use. Great cornbread every time!

My southern Daddy when to someone's house and they had put sugar in their cornbread. He grumbled and said "That's corncake not cornbread.". Bless em!
