Not going to lie, my folks kind of traumatized me with eggplant as a kid but maybe with the salsa negra and crema it can redeem itself with me as an adult. 😂 Thanks for another secret weapons video Rick! I love this series!

Rick, this looks so tasty. I love eggplant and have used it only in Italian and French dishes. I never thought to use it in Mexican dishes. I'm going to try this one. I'm having a blast with this series! I love these short cuts that don't ruin any flavor. :-) Thanks!

Hard not to laugh at this point... I just made a batch of your Salsa Negra for a party on Saturday and yesterday found my own Japanese Eggplants (2) were hiding over a dozen of these beauties beneath their internal foliage, the first huge crop of the Summer. Tonight will be a good night!

Ok this looks really good. Like most, the only eggplant I've eaten is pretty much when it breaded and parmed. So for the bean sauce, I couldn't really tell for sure, but are the beans used drained or with the can juice?

in general, when you(as in you, rick bayless) use canned beans, do you tend to use "no salt" beans or the regular salted kind?

I made this for dinner with some guajillo salsa I had already made, added some fresh cut corn around the eggplant, and paired it with a Mexican inspired coleslaw made with lime juice. It was wonderful! Now I need to make that salsa negra and try it again. Thanks!!

The problem being in Alaska is that I have yet to see any eggplant that did t look like it just didn’t got twelve rounds with Sonny Liston.

I need to try and grow my own next year ur lack a greenhouse
