Do you know this plant is related to sunflowers? Jerusalem artichokes, also known as sunchokes, are the perfect crop to harvest fresh all winter.

The tubers store well in the ground & the sweetness improves with the extended cold weather.

I harvest as needed & they are a good potato substitute & very productive. My favorite way to eat them though is to lacto ferment and eat them as an olive substitute.

This is a perfect plant to grow in a time saving garden as it needs very little care and will tolerate most soils & shady areas.
