Updraft, loss of mass through ejection due to heat, impurities and carbon being burned off leaving iron. This accounts for the lower mass, but the increase due to oxidizing is a little delayed so the increase goe up after all mass is lost due to the above mentioned reasons.

The flame heats the air around the balance that is why the mass seems to decrease at first. But the mass is actually not decreasing.
