This week we're making party wings - my way! Make these chicken wings for your next watch party or get together. Your buddies will love 'em.

Products Used:

Ingredients:
• Party Wings
• Heath Riles BBQ Competition BBQ Rub
• Heath Riles BBQ Garlic Jalapeño Rub
• 1-2 tbsp Texas Pete Sriracha
• 1/2 cup Checkered Pig Competition BBQ Sauce
• 2 tbsp honey
• 2 tbsp corn starch

Directions:
1. Get your grill lit. We were around 400-425º on our Weber Kettle for this cook. We placed our charcoal in a vortex charcoal basket to cook our wings indirectly.
2. Place your party wings on a rack and spray with Duck Fat Spray.
3. Season both sides of your wings with Heath Riles BBQ Competition BBQ and Garlic Jalapeño Rub.
4. Place your wings in a bowl with 2 tbsp of corn starch. Toss your wings.
5. Place them back on the cooling rack and give the wings a light dusting with Heath Riles BBQ Competition BBQ Rub.
6. Place your wings on the grill. We placed them in a circle around our vortex charcoal basket.
7. After 15-20 minutes, flip your wings. Our wings were hitting between 140-160º at this time.
8. After you flip your wings, make your sauce. Combine 1-2 tbsp Texas Pete Sriracha, 1/2 cup Checkered Pig Competition BBQ Sauce, and 2 tbsp honey in a melting pot. Add to the grill so it can heat up.
9. Once our wings were hitting around 190º internal, we dunked them in our sauce and put them over direct heat to get a little char. Allow them to caramelize for about 5-10 minutes.
10. Once your wings are where you like them, pull them off the grill and serve.

Heath I’m really enjoying the cooks you are doing on a Weber Kettle because that’s what I use in my backyard. This is another fantastic recipe that I’m going to try!

I been working on getting my wings dialed in. Think I am about on the mark. Use that Garlic Jalapeño for the start and then put the Honey Chipotle on. That's been a good combo even on the ribs.

Looks awesome Heath and definitely going to try them with your Garlic Jalapeño rub next time! Been using my Vortex / Weber combo for a few years now (thanks to Malcom as well) and absolutely the best way to do wings. Loved them so much I added a 26" Weber Kettle to my line up just so I could fit more wings on the grill...lol.  

One of my favorite "tricks" when doing these is to throw a chunk of hickory, cherry or mesquite directly over the Vortex during the cook. Adds and awesome smokiness to the wings.

Always first class presentation! I do have a question though....why didn't you place any wood over the center over the vortex for more smoke flavor?

Just purchased many of your rubs and sauces on Amazon. I added cornstarch to the wings as you instructed, but apparently it was too much. I could taste the cornstarch after they were cooked. Is the corn starch essential??

I own every one of your rubs but must ask what the competition rub taste like ? Lol. Or should I just combine a few of yours already to make it your competition rub ?

This may be a silly question, but... I was surprised that you grill your wings until they hit 195 - 200 degrees. I've always done chicken to 160 - 165 degrees. I thought your wings would dry out, cooking them to that high a temperature! I've never gone higher than 170 with chicken, no matter what! Does cooking the to such a high temp make them more tender? I assume they stay juicy too... Thx
