Creamy Mushroom & Spinach Pasta (No Cream, All Flavor)

Ingredients:
• 150g whole wheat or regular pasta
• 1 cup mushrooms, sliced
• 1 cup spinach, chopped
• 3 cloves garlic, minced
• 1 tbsp olive oil
• 1/2 cup milk (or unsweetened plant milk)
• 1 tbsp all-purpose flour (or cornstarch for GF)
• Salt & pepper
• Optional: chili flakes, grated cheese, parsley for garnish



Instructions:
1. Cook Pasta:
Boil pasta as per instructions. Reserve 1/4 cup of pasta water and drain.
2. Sauté Veggies:
Heat olive oil in a pan. Sauté garlic for 30 secs, then add mushrooms. Cook until browned. Add spinach and cook till wilted.
3. Make Sauce:
Push veggies aside. Add a little more oil, sprinkle flour, and stir quickly. Slowly add milk and reserved pasta water, stirring to make a smooth sauce.
4. Mix & Serve:
Add pasta, season with salt, pepper, and chili flakes. Toss well. Garnish with parsley and a sprinkle of cheese if desired.
