Don’t use ghee—use regular butter instead. You might wonder why, since butter has milk proteins that burn at a lower smoke point compared to ghee, right? But that’s exactly the point! You want to take the butter to the stage where the milk proteins start to brown, creating those flavorful speckles at the bottom of the pan. This brown butter is called beurre noisette in French, and it’s valued by many cultures because it has a rich, nutty flavor that’s far more complex than just melted butter or ghee. Once it reaches this point, turn off the heat and add paprika powder or cayenne pepper. The moment the spices hit the hot butter, it will foam beautifully. Then, pour this aromatic butter over the dish for that dramatic sizzling effect. Trust me, I’m Turkish!

i'm honestly glad that more and more "daily" turkish food is getting popular. we don't eat kebab and baklava all the time. tbh most people only eat those a few times in a year:) this type of food is what we do at home and i love that people are trying it!! great recipe

Thats is called yalancı mantı(lying raviola) thats ı without the dot on top and that gives a short uh sound(ɯ). Traditionally we cover it totally with the garlic yoghurt and we use more than a dash of paprika butter. In the end we top it off with turkish chilliflakes and sumak.

This is what we do if we crave mantı but have the ingredients for this one instead.

Btw we usually add lot more garlic yoghurt on top of it (also its not regular yoghurt, we use turkish yoghurt which is different than american one)

And it actually depends but when i prepare it i like to add a tablespoon of the pasta/mantı water to the garlic yoghurt sauce. It makes it more flavorful and also liquidifies it to be more saucy. But make sure you dontget the sauce hot. Any sauce with yoghurt needs to stay cold.

After adding the yoghurt sauce on mantı, i add another sauce (i prepare it by mixing salça with a little bit of water to liquify it and add some black pepper. It's popular too)

Then lastly i add some drops of paprika butter, and season it up with lots of mint and oregano.

Also dont forget to add salt, a tbsp of sunflower oil and a chicken bouillon to ur water when cooking the pasta/mantı.

Edit: you can add a little bit of pasta water to the salça sauce too. You can directly use tomato paste instead, if u cant find a turkish salça.

And also when i said to keep the yoghurt sauce cold, i mean only the yoghurt sauce. Food still needs to be hot ofc.

This is deconstructed mantı basically. I make it when I don't feel like making the little raviolis. American here that speaks Turkish, my native American husband loves it too! 😂
