It was always Non Piu Andrai. They just dumbed it down for the film, so Mozart could humiliate Salieri in front of his peers and move the plot along.

There is an historical imprecission in the whole movie; there was no rivalry between Salieri and Mozart, but without it it would have been a very boring movie.
