Yoimiya Specialty Dish: Summer Festival Fish Dango

Dango:
1/2 (115g) cup silken tofu (do not use other types, not soft, not firm, SILKEN)
1 cup (130g) Mochiko glutinous rice flour (must be glutinous, not regular)
*mix both until you get a smooth dough, if it's dry add more tofu, if it's too wet add more Mochiko. The texture should not be sticking to your hands and must be smooth
*once you've created your dango, boil for 4 1/2 minutes

Syrup:
2 tablespoon soy sauce
1/2 cup water mixed with 1 tsp corn starch
1 tablespoon brown sugar
*mix all into a pot and boil for 3-4 minutes

Extras:
Keep a small amount of water near by
Small paint brush to do details with

I’ve never made dango before, but have made my fair share of tang yuan and I always boil a very small ball before kneading it back into the dough. This adds elasticity and keeps the dough from cracking easily. My quick google search didn’t turn up any recipes for dango that calls for cooking a portion of the dough beforehand but I wonder if it wouldn’t help for a heavily molded dango like this.
