The Perfect Summer Cake: An Easy Pavlova With Lemon Mascarpone Cream And Nectarines

As light a dessert as they come ! This Pavlova cake is lovely - your guests will be fighting over it. Very easy to make and is great for the summer.

Merengue: 4 egg whites, 180 g sugar, 1 tea spoon corn flour ( optional), 1 tea spoon lemon juice.
Cream: 285 g Mascarpone, 300 ml full cream milk, 2 tablespoons sugar, 1 and half table spoons corn flour, zest and juice of a large lemon
600 g nectarines, (weight with stones), 2 table spoons sugar, 1 full tea spoon cardamon powder ( depending how fresh is yours - mine was not too fresh ), 200 ml of water .
Almond flakes ( optional)

Preheat oven to 140 degree ( fan). Once the Merengue is in reduce right away to 130 and bake for 1 hour. Use right away or let it cool in the oven for a couple of hours.
I used 30 cm round pizza tray
