Crying Tiger Steak
Ingredients
Steak+Marinade
* 1 ribeye steak
* 1 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tbsp fish sauce
* 1 tbsp sugar
* 1 tsp black pepper
* 1 tbsp neutral oil
Sauce(Nam Jim Jeow)
* 1 tbsp glutinous rice
* 1.5 tbsp palm sugar
* 3 tbsp fish sauce
* 2 tbsp tamarind paste
* 3 tbsp lime juice
* 1 tbsp Thai chili flakes(to taste)
* 1 small shallot(sliced)
* 1/4 cup cilantro(chopped)
Instructions
1. Marinate steak with ingredients for 15 minutes.
2. While that’s marinating make the sauce by toasting rice in a dry pan on medium heat until golden brown. Use a mortar and pestle to grind it into a fine powder.
3. Pound palm sugar and combine it with the rest of ingredients.
4. Heat a pan with 3 tbsp of oil on medium high heat. Once shimmering, sear the steak for 30 seconds on each side making sure to continuously flip until it forms a nice crust. I used a two inch steak and cooked it for a total of 1.5 min on each side.
5. Let cook in a 200°F oven until it reaches your desired doneness. I cooked mine to 135°F for medium rare.
6. Let rest for 10 minutes then serve with white cabbage and the sauce.

This is such a great channel. No frills, no fancy obscure ingredients or editing that makes you question everything when you take 2 hours and not 20 mins to make the dish. The food is fast and flavourful and is my wheelhouse of recipes :)

I think a lot of the social media cooks and chefs go overboard on stuff these days. Dry aging meat in butter and what have you...

There's a lot to be said about recipes like this. Simple, no gimmicks and just letting the flavours work together.

correct me if i'm wrong but you also add a bit (2 cloves) of garlic paste to the marinade? or else this is amazing!

I’ve made this now about 3x. There are no measurements, so I’ve been doing the marinade using a tablespoon for all ingredients and then 2 tablespoons for the sauce ingredients. This works for like 2.5 lbs of beef. Some changes I made if interested: 1. I don’t have tamarind Paste. I do have Amchur powder, which is Indian Mango powder. I mix equal parts of this(1tbsp) plus (1tbsp) water to make a paste, and that’s an alternative that tastes tangy. 2. I don’t have palm sugar. I’ve been using Monk Fruit Sugar. 3.Also, I just use thinly sliced beef steak instead of thicker steak. Baking in the oven took too long lol. Thin beef allows me to pan fry it quickly.

For anyone that wanna make this, you need to use the brisket instead of other beef part because that is what the "crying tiger" part is in Thai.
