It’s my understanding that In The Medieval Ages the crust was not really meant to be eaten. It wasn’t very good. It was more like a Packaging for what’s inside. So one simply tore open the crust and ate the filling. Though I think a more high end pie would’ve had a more edible crust.

Probably for business owners since at times pepper would be a bit hard to come by but sage and thyme would be common more local spices used

Your recipes look so amazing, but I wish you would have more detail in the preparing of them. Like measurements, and your stock includes pigs, trotters where you just show a syringe with liquid in it with no explanation.
