Bucatini with Fava Beans
When I think of fava beans I think of Hannibal Lecter. So, pour yourself a nice chianti with this dish
Serves 4

Ingredients
1 lb Bucatini
3 tbsp butter
¼ cup extra virgin olive oil
2-3 cloves garlic, finely sliced
1 shallot, finely chopped
Chili flakes, to taste
Salt
Freshly cracked pepper
2 cups fava beans
1/4 cup reserved pasta water
¼ cup fresh parsley, chopped
Parmigiano-Reggiano
Method
1. Cook the Bucatini in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/4 cup of pasta water.
2. In a large frying pan over medium heat, heat butter and extra virgin olive oil. Add garlic, shallots, chili flakes and season with salt and freshly cracked pepper. Saute until lightly browned and tender.
3. Add fava beans and sauté until tender and blister a bit. Add a bit of pasta water and the cooked Bucatini. Toss to incorporate all ingredients, adding more pasta water if needed. Add fresh parsley, toss and serve with freshly grated Parmigiano-Reggiano.
