Scoring Country SOURdough with Oat and Pumpernickel SOURdough.

Scoring has long history. It has evolved from simply marking which loaf is ours when baked in a communal town oven into now, where it is celebrated as an art form.

No need to be scared, but it is trial and error until we know what scoring does to the bloom of our loaf. One of my favorite part in SOURdough making.

Love it! Just a thought-if it was normal speed it could have been very satisfying to watch instead of rather stressful:). Great work and looking forward to more videos just normal:)

You score quite a few loaves in your video, do you have a very large oven or do you score ahead of time or is this just for demonstration purposes? Thank you for sharing, beautiful work.

Would you recommend cold proofing in the fridge overnight in pan and then baking in the morning .I m planning ur Sourdough tin loaf.pls suggest something.

Camera work needs improving sometimes the baker is scoring almost off camera. But very interesting patterns I just had to change the speed to the slowest to appreciate it
