I'd like to make one nitpick, you said how today it is transcribed onto a fixed scale, such that Do will always be middle C. While that may be true for transcription (which I have no experience in) we certainly maintain the practice of a moveable Do system. Otherwise good video!

Hate to say it, but this isn't medieval notation. The style of square-note plainchant notation was developed in the late 19th century by the Monks of Solesmes. These versions, with this specific style of notation, was the one endorsed and disseminated by the catholic church. While it is certainly similar to medieval plainchant notation (especially later square notation), it isn't really medieval at all.
