wow toshikoshi soba! was totally not expecting you to have this tradition but it’s really cool you kept it after leaving japan!

personally, i’ve eaten pho as my toshikoshi soba before and this year it was instant ramen lmao...very untraditional.

Whenever I have soba noodles I use fish sauce as a dipping sauce but I dilute it with a bit of water because it's so strong but soba noodles are really good and maybe I'll try them the way you make them they look so good!

Fun Fact: fresh wasabi is actually very expensive and it has a milder taste than the wasabi you buy from stores and sushi shops

In Japan it's not rude to slurp when eating noodles, it's a way of complimenting the food

In Malaysia...Dipping sauces would always have chilli and garlic with soy sauce so I was kinda expecting for chilli...Wasabi kinda becomes dust when wet...Chilli you can still eat it with the noodles...But we don't have Soba Noodles...we have Mi Goreng lol...

In my Japanese family, we typically add the noodles to the sauce and eat it ramen style as opposed to dipping the noodles, but I definitely have to try your style of soba!

Just a heads up, I would reccomemd to freshly grate the wassabi right before eating the soba.
