I love egg salad 🥪. A roasted chicken makes a good base for a capsule grocery item- chicken salad, chicken tacos, soup, casserole. Depending on how many people you have to feed, one or two chickens could feed you several days.
I love the view from your deck. It’s beautiful and peaceful ❤

Love the capsule grocery list, for veg I would add onion, celery, carrots or bell pepper. These are used constantly in recipes to flavor your meal, and are highly versatile. Thanks for the ideas. 😊

My capsule would have rice, eggs, veggies, pasta sauce, cheese and bread. You could make egg fried rice, tamagoyaki (Japanese sweet rolled egg) with rice and veggies in the side, eggs in purgatory, cheesy rice with pasta sauce, onigiri (riceballs), rice balls, egg and cheese sandwiches, grilled cheese, scrambled eggs with salsa or pasta sauce and toast etc. Rice is so versatile and it's a staple in our household!

I don’t have a capsule but my plan is to eat a lot of soup this fall and winter using beans, noodles etc as my base. I can make my own broth. I am also only using half portions of any meat to stretch the meat budget.

I kept track of the easiest meals I make regularly that dh & I love. I don’t like cooking and I have health issues so easy is best.

I recently turned it into a rotation of 20 super simple dinners that get me through 4 weeks- 5 dinners a week allowing leftovers on 2 or more nights.

If I don’t make all the meals in a week they just roll over into the next week because it’s a loop.

I’m on week 3 and it’s so much easier. The grocery list I need for each week, the pantry items- all simplified.

If I want something different I can swap it in but it’s just using the same things we ate all the time anyway. Just making it easier.

I operate out of a fridge, no separate freezer and we’re retired and live in an apartment so storage space for a pantry is quite limited.

It’s making life simpler and cheaper. I don’t reinvent the wheel every week racking my brain for meals and a grocery list.

I do online grocery shopping and pickup once a week and this capsule meal plan plus online grocery shopping has started to save us serious money.

I buy the meats I use on special, and freeze flat so I maximize space in my fridge freezer.

Sweet potatoes topped with banana and peanut butter and other sweet things or topped with black beans and salsa and other Mexican flavors or in a curry dish with chickpeas and rice. Quinoa is such a healthy grain and can be mixed with all kinds of vegetables, as well as made sweet with fruit or thrown on a green salad for protein and all kinds of other nutritious goodness. And any kind of bowl with a bean, a green and a grain and a good homemade sauce! 💪🏼 💜

My capsule kitchen is tortilla, eggs & cheese. My cookbook "Beans" is a staple in my kitchen. I can do anything with beans!

Great tips.
My go to capsule meals are spaghetti, chicken rice (rice with chicken seasoning cooked in), and breakfast (pancakes) for dinner.

Chicken, rice, tortillas, rotel & onions can make many meals! I always keep the Italian sausage frozen in two link portions for soups, stews & casseroles.

I’ve been collecting my receipts for the last three weeks so I can create my capsule grocery list. I know Ground beef / mince is in my capsule grocery list…
Burgers, spaghetti Bolognese etc
Carrot, bell peppers, leek (instead of onion) are always on my list

Pasta is one of the items you can put in your capsule. I made too much pasta once, so the leftovers I made pasta salad with it and it was delicious

For those that use an app for groceries, if you sort your previously purchased items by what you buy the most, you might have your capsule grocery list already. I ended up with a capsule grocery list by accident and I save so much money sticking to it most of the time even though I mostly get my groceries delivered.
