My granddaddy's version of hoecake is very special to me, my sister, and my cousins. When we younger and spent the night at my grandparents' house, this was always a requested late night snack.
When my granddaddy cooks, he doesn't measure his ingredients. Just like most awesome cooks, he eyeballs it until it looks right or tastes right. On Veterans Day, I spoke to him about cooking and how he makes his version of a hoecake. He told me what he puts in it and how he cooks it, but he wasn't able to tell me how much of each ingredient to add. Lol. So, I eyeballed it from memory, and it came out FANTASTIC!!! This hoecake tastes just like my granddaddy's! I think he would be proud.
Recipe
Yields: 4 servings
1 cup of self-rising flour
3/4 cup of whole buttermilk
1/8 cup of shortening
1 tsp of bacon grease
1. In a medium bowl, thoroughly combine the flour and shortening. I used a blending fork, but you can use a regular fork.
2. Stir in the buttermilk.
3. Using a 7 and 1/2 inch frying pan, melt 1 tsp of bacon grease on medium heat.
4. Once your grease is hot, add your hoecake batter. Push the batter down just a bit so that it flattens out.
*5. Allow the hoecake to cook on one side for about 5 minutes. After 5 minutes, flip and cook for about 4 and 1/2 minutes. You are looking for a nice, dark, golden brown color on both sides. Be careful not to let the hoecake burn!
6. Once your hoecake is done, remove it from the heat and plate it. Cut your hoecake into 4 pieces and enjoy!
P.S. As kids, we added mustard and onions to our pieces. It's sooo delicious this way!
