Gloves cannot be Practically used here. It will just melt with the Heat on that Pot and it won't be even too. The Only change needed here is that the Dough mixing should be done at a more Higher palce like a Desk of Something and not while squatting on the Floor.

I don't know why People are Criticizing the use of hands here. Sadly, most Criticizing this are Indians, Suffering from Post Colonial Identity Crisis. They have Not gotten over the Colonial Hangover or White Approval. Many Street Food places around the World uses Hands for Making Food. We eat Sandwich, Burger with our Hands. There is Nothing bad in this.

Personally I feel awkward eating food from a place where they use their hand because you never know if they actually clean their hands or not and I think that's quite a major reason why other people don't eat from such places either unless they are absolutely sure that they wash their hands because it's so grounding to cook with your hands and it's just a bond with your food but dudes hygiene matters so does taste but health and hygiene really matters
