Since many people don't understand how this ikejime technique works, allow me to explain... They first spike the brain of the fish which kills it, rendering it brain dead and unable to process any feeling. Then, they destroy the spinal nerve cord with the wire you see here. The disturbing movement you see in the fish is the 'knee jerk' type reaction from its nerves being broken. There should not be any feeling associated with this process as the fish is already dead from the brain spike.
This technique was developed by Japanese fisherman to keep fish tasting fresher for longer, and to help eliminate fishy taste which comes from the buildup of chemicals in the nervous system of the fish. Once the nervous system is destroyed, it cannot excrete those chemicals.

Y'all they already brained it. They're removing the spinal cord which is why it twitches. Helps relax the muscles so the meat is as tender as possible. Ikejime, look it up.

"Ikejime (活け締め) or Ikijime (活き締め) is a method of killing fish which also maintains the quality of its meat. The technique originated in Japan, but is now in widespread use. It involves the insertion of a spike quickly and directly into the hindbrain, usually located slightly behind and above the eye, thereby causing immediate brain death. After spiking the brain, a thin needle or piece of wire is inserted into the spinal column to prevent any further muscle movement. When spiked correctly, the fish fins flare and the fish relaxes, immediately ceasing all motion. Destroying the brain and the spinal cord of the fish will prevent reflex action from happening; such muscle movements would otherwise consume adenosine triphosphate (ATP) in the muscle, and as a result produce lactic acid and ammonia, making the fish sour, soggy and less tasteful."

this is to disconnect all nerves from spine, they do it to all big fish as there nerves are still active and they can hurt you even tho they are dead
