CREAMY MUSHROOM RISOTTO 🍄✨

🍄 INGREDIENTS:
30 g dried mushrooms (for stock)
1l hot water
30 ml olive oil
2 shallots, diced
2 cloves garlic, minced
225g mixed mushrooms, sliced
225g risotto rice, rinsed
60 ml vegan white wine (optional)
1/2 tsp salt
50 ml vegan double cream or full-fat coconut milk
30g vegan butter
30g nutritional yeast
Salt and pepper to taste
Fresh parsley to garnish

🧑‍🍳 HOW TO:
Step 1 - Soak dried mushrooms in hot water for at least 30 mins.
Step 2 - Sauté shallots and garlic in olive oil until fragrant.
