I've seen all the tortellini soup recipes out there (and there's a LOT). But your search ends here. My version is loaded with those little pasta purses swimming in a medley of a creamy, cheesy, tomato-based broth along with a burst of sweet tomatoes and fresh basil. It also couldn't be easier as you just add everything to the Instant Pot, hit a button, stir and it's done. It's Creamy Tortellini Soup and once you try it, it's going right in your rotation.

This recipe and the chicken and dumplings were huge hits. I picked up cooking big time just before the pandemic. I can say I really haven’t eaten the same meal twice in a week. I subscribe and will be looking to purchase ur book. Great job Jeffrey

I just made this. And it is AMAZING! I did modify the recipe slightly. I browned about 1/4lb Italian Sausage in olive oil, then deglazed the pot with about 1/2 of my better than bullion broth. Then followed the recipe. I used a little of the Borsin on very lightly toasted baguettes.
The best part is that it took me less that half an hour from start to finish. Deeeelicious!

I haven't made this recipe, but have made Tortellini soup and wanted to say: make enough for leftovers because it's even better the day after when the tortellini are swollen full of soup.

If you are thinking about trying this receipt, stop thinking and do it. This was so easy to make and was absolutely delicious. My only error was I should have doubled the receipt, so I had leftovers to take to work. Thanks Jeffery, you crushed this one.

Tried this tonight - easy peasy. Followed directions to a tee. Used mild cheddar, the Garlic herb bourdin cheese (and used only half of the heavy cream.). My husband raved about it, which he never does❤️. Thanks Jeff!

As Jeff indicates, his recipes are highly adaptable to your own tastes. I followed the recipe as shown. As some others have done, I used some Italian sausage (1/3-1/2 sauteed).
At the end, I added about 6 oz of imitation crab meat. Found an alternative to Boursin, added half. Deeelish !!!
