24 Hour Instant Ramen | A Cook Named Matt Vlog 06

Im going over that naruto ramen i made on tik tok in this video ! Also a traditional Japanese chashu pork!

Ingredients:
(For the broth)
-2 lbs pork bones and meat
-1 cup chopped ginger
-1 yellow onion halved
-1 cup garlic cloves
-bunch of scallions
-2 cups mushroom stalks

-roast the pork bones in a 500°F oven until dark brown.
-put everything into a big pot atleast 2 gallons
-pour water up to the rim
-bring up to a simmer then set heat to low
-let it go until it reduces by about two thirds. Or about 24 hours
-strain and use immediately for most delicious results. Can be chilled and stored in fridge or frozen for another day.

(Chashu Pork)
-2-5 lbs pork butt bone out side
-2 cups soy sauce
-1 cup sesame oil
-1 cup rice wine vinegar
-1/2 yellow onion chopped
-1/2 cup chopped ginger

-tie pork with butcher twine as described in video
-sear in a cast iron pot until golden brown all around.
-lower heat and pour in all ingredients.
-cover with lid.
-turn pork every 30 minutes to glaze
-cook for about 2-3 hours
-remove and chill in fridge
-slice to desired thickness and heat in a 350°F oven or sear on a skillet to your liking.

(For the Tare)
-1/4 cup soy sauce
-2 tablespoons Sake
-1 Tablespoon sesame oil

-mix all ingredients and taste. Add more soy sauce til desired saltiness.

(For the Soy Cured Eggs)
-eggs
-2 cups soy sauce
-1 cup water
-1 cup rice wine vinegar
-two tablespoons maple sugar
-sambal to taste

-bring a pot of water with a touch of vinegar to a boil. Drop in your eggs and set timer for 7 minutes.
Immediately drop in ice water when timer goes off.
-mix water, soy, sambal, sugar, vinegar and marinade the peeled eggs for 30 minutes to an hour in mix.

(The Setup)
Pour the tare in your ramen bowl followed by the hot ramen broth. Give it a stir, then cooked ramen noodles, chashu pork slices, soy brined egg, sliced scallions, fish cake.

Best thing about grocery shopping in Seattle was when you needed ANYTHING from Uwajimaya. You always end up getting a plethora of other great snacks and seafood you didn't know you needed.
