Ingredients for Tari Wala Chicken Curry:
(Tsp- Teaspoon; Tbsp- Tablespoon )
- Chicken - 1 kg (curry cut with bones)
For Marination:
- Salt- 2 tsp
- Turmeric powder-3/4 tsp
Onion-Ginger-Garlic Paste:
- Onions chopped- 100 gms
- Ginger, 1” chopped
- Garlic cloves-10-12
Tempering:
- Green cardamom-6
- Black cardamom-2
- Cloves-6
- Cinnamon-2 pieces
- Bay leaves, halved-3
Spice Powders:
- Red Chilli Powder- 2.5 tsp
- Cumin powder- 1 tsp
- Coriander powder- 1.5 tsp
- Chicken Masala- 2 tsp
- At the end,
- Roasted & crushed Kasuri Methi- 1/2 tsp
- Garam Masala powder : 1/2 tsp
Other Ingredients:
- Onions chopped- 2 medium (150 gms)
- Tomatoes chopped-100 gms
- Sunflower oil- 6-7 tbsp
- Salt- pinch
Preparation:
- Marinate the chicken and set aside for 60 mins.
- Chop the onions & tomatoes and prepare the paste.
Process:
- Heat oil in a pan and then add the whole garam Masala.
- Give a stir and add the chopped onions. Fry on medium heat for around 7-8 mins and then add the masala paste. Fry on medium to low heat for 5-6 mins till the masala is fried and no raw smell remains.
- Now add the chopped tomatoes and a pinch of salt and cook on low heat for around 5 mins till these are cooked.
- Add all the spice powders other than garam masala powder, mix and cook on low heat for around 10 mins till the masala is cooked and oil separates. (Add a splash of water from time to time and bhuno)
- Now add the marinated chicken and mix and bhunno on medium heat for around 10-15 mins.
- Now add 300 ml water, mix and cover & cook on low heat for around 15 mins till soft.
- Finish with garam Masala powder and roasted & crushed Kasuri Methi and simmer for 2-3 mins.
- Cover & let it rest for half an hour.
