Chef Rich Rosendale explains the benefits of using the Compression Program on the Henkelman CombiVAC.

"For the compression setting we use this for any of our fruits whenever we do our compressed melons. Things like watermelon and lime or midori and honeydew or cantaloupe and vanilla. These are items where we want to infuse a syrup or a flavoring into a fruit and just like any of your equipment in your kitchen where now equipment is becoming smart. You can actually put settings that you like whether it's a sous-vide cooking or it is an oven setting we do the same thing with many of our recipes for compression this is the one that we've set up the parameters whenever we're doing any of our compressed melons."

Compression Program
The Compression setting is for texture modification. It can be used for compressed fruits or compressing ground beef by creating more yield and improved texture.
