Not only does charcoal infuse more flavor, it's a hotter, dryer source of heat than gas (Propane, when burned, releases tiny particles of water). This means your burger, steak, fish or meat-like product will develop a better and more flavorful crust a heck of a lot faster.

but its also definitely important what type of coals are you using. different wood make different tastes too

This is false, I cook chicken 100% indirect all the time over regular charcoal and you can clearly taste the fire.
