I also cooked up some turmeric quinoa and layered on a rainbow of veggies and tofu, and voila! When you blanch the collard green leaves in boiling water for a minute, they become super soft and pliable but still sturdy enough to hold up well, so this would be perfect for meal prep as well.

You can blend cottage cheese and egg whites and bake them on a cookie sheet, even add shredded cheese if you like. You will get a high protein wrap from this. Approximately 4, depending on how big you cut it.

I am not vegan but this is neat, If i ever see collard greens this big, I will do this for sure .

It is always better to use cabbage leaves, as they do not have oxalates.
Collard greens are full of oxalates.
Tks for considering this very important detail for our health.
