Buckwheat Pancakes Made With Sourdough Discard

Like to try a new pancake recipe that takes advantage of some of that sourdough discard you’ve got? Try out my recipe for fluffy buckwheat pancakes (the batter works great for waffles as well). These pancakes are super soft and tender - they pick up some nuttiness and earthiness from the buckwheat. With warm maple syrup and a heap of fresh blueberries on top - I’d like to say it’s breakfast perfected! Hope you give it a try and love it as much as my family does!

This is a terrific recipe! I don't always have buttermilk on hand but I always have whole milk so I can make on a whim (however, I leave out the buckwheat). I fed my starter extra last night and the pancakes came out extra fluffy as expected. I have also made the night before, holding back the BS as suggested in a different post, and refrigerated for my husband to finish making in the morning. The overnight version also came out great. Thanks so much for sharing!

OMG! These are amazingly good, so soft! I too thought it might be sour. This recipe only made four Belgium waffles, if you have a big family you need to double the recipe. I didn't have buck wheat, I only used AP flour. Will make these again!!

Oh my! this is the best sourdough pancake/waffles recipe! although i switched up buckwheat to rye flour, cause i don't have any, but it's really good!

now i have to make bread often to have a decent amount of discard to make these! lol Love it Thanks for the recipe ;-)

I love the recipe, it makes me feel a bit satisfied with my indefinite failure of making sourdough starter :)) it’s been a month n now I’m building your exact recipe of making the starter from the start, i hope it’ll have mercy on me this time, if it’s not let’s make a bunch of pancake of it then 😅

I thought they would taste a bit sour because of the amount of sourdough added, but they were super yummy and not sour at all. :)

Best waffles (I prefer waffles over pancakes) ever. Don't even need syrup or buttah. Rinse repeat!!! Thanks
