PA DUTCH WHOOPIE PIES W/ HOMEMADE MARSHMALLOW

This is the Amish Whoopie Pie I grew up with! It's different than many today that use an icing filling instead, not that those are bad. The homemade marshmallow can also be used for other things like marshmallow sandwiches!

Whoopie Pies

1 C Crisco
2 C sugar
1 C sour Milk (buttermilk-- 1 tbs lemon
juice or vinegar to 1 C milk, let sit 5 minutes)
1 C water
2 egg yolks
4 1/2 C flour
1 C cocoa
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Cream shortening and sugar.
Add milk, water and egg yolks, mix well.
In separate bowl, combine dry ingredients and mix.
Add to wet ingredients and mix together with a spoon.
You can continue to mix with a mixer on low. Batter will be thick.
Drop uniform drops onto a greased cookie sheet or parchment paper lined sheet. If using a greased sheet, only grease it the first time.
Bake at 350F for 12 minutes.
Cool.

Whoopie Pie Filling:

For this recipe, you are basically making a homemade Marshmallow Fluff/Creme.

3 egg whites, room temperature

2 cups light corn syrup

1/2 teaspoon salt

3 C sifted powdered (confectioner's) sugar

1 tablespoon pure vanilla extract

In large bowl of an electric mixer, add egg whites, corn syrup, and salt. Using your electric mixer on high speed, mix for approximately 5 minutes or until the mixture is thick and volume has almost doubled.

On low speed, add powdered sugar and mix until well blended. Add vanilla extract just until well blended.

Your homemade marshmallow fluff/cream is now ready to use on your Whoopie Pies or other recipes. Use immediately, or refrigerate in a covered container for up to 2 weeks.

Makes 14 pies using an ice cream scoop measure.

I love whoopie pies! I grew up in Pittsburgh but also lived in York and Harrisburg for 7 years where I learned about whoopie pies. Now I live in northern Idaho and ordered them for Christmas from Bird-in-Hand restaurant. YumOh!!!!

I love ur stories on the history of the food that ur making. U should put it into ur cookbook. Maybe some of the recipe but not to many cause I don’t want it to take up space and u have to cut recipes out to fit it in.

BTW---someone said they are gobs. That is western PA terminology. They are not called that in eastern PA. Gobs are to western Pennsylvania what whoopie pies are to most other regions including eastern and central PA.

You got almost as much marshmallow on you as in you. I made salted caramel whoopee pies once. The girls in the office forbade me from bringing them in again. I could eat one of those pies right now with my cup of tea. Thank you for showing us your recipe, Helga
