Episode 41: Lemon Basil Cookies

Take a bite into something delicious, refreshing, and easy to make!

Ingredients:
-Zest from a whole lemon
-1½ tsp of fresh lemon juice
-1 cup flour
-8 tbsp of unsalted butter (cold)
-½ cup confectioners sugar
-¼ tsp of vanilla extract
-2-3 tbsp of fresh basil leaves
-¼ tsp salt

Instructions:
1. Preheat the oven to 375°F and prep a baking sheet with parchment paper(unless you will be putting your dough into the fridge, you can preheat then).
2. Roughly chop your basil and cube your butter.
3. Combine all of your ingredients into a food processor (or blender) and pulse until it forms a dough. Taste test it, if you want more lemon add more lemon or if you’d like a more basil taste, add some more!
4. Next if your dough is too sticky to form balls, place in the refrigerator for 15-20 minutes. This will ensure it to be cold and easier to form into your balls.
5. Grab about a tablespoon size scooper or spoon. Scoop out your dough and roll into balls.
6. Once you have placed all your cookie dough balls on the baking sheet grab a cup of any sorts and dip it in additional confectioners sugar. Once you have dipped and there is sugar at the bottom, press down (lightly smash) your cookies. If you would like a thin cookie you can be more aggressive with your smash. I just do a gentle smash, so there is still some thickness to my cookies.
7. Throw them into the oven to bake for 10-12 minutes, remove from the oven and let them cool on the baking sheet for 10 minutes.
8. You did it! Enjoy!
