RECIPE (3 servings, 35min prep time):
-1 lb (455g) carrots, peeled and chopped
Cook in water until soft, then mash either by hand or with a blender (gives a better and smoother result)
-2 to 2 1/4 cups (260-290g) flour
-a pinch of salt
Add to the carrot mash and knead until you get a dough ball.
On a floured surface cut in 4, roll into snakes and cut into big or small gnocchi.
Boil in salted water until they start floating to the top (~3mins).
Serve with your favorite sauce e.g. pesto.

You can also make nice patties with carrots...

Blend them together with oatmeal and fry it in a pan.. (of course salt an spices)

Here in India we do the same with literally anything that can with flour and make the roti out the dough thus created . Spinach beet root potato are only a few of the vegetables that we knead with flour and make either roti or better yet puri out of the dough

Coming from a non vegetarian, i love watching your videos cause they are so friendly and makes me wanna think that being a vegan isn't so bad. Honestly you're the only vegan i know who doesn't try to make us feel bad or like some negative stuff you just admire and cook veggies in a way that i love watching your videos.

My personal opinon, but instead of boiling it would be better to puree carrots with water in a blender, and knead the dough. That way you won't be boiling carrots twice and avoid overcooking and preserve more nutrients.

Yeess ! I make those all the time, it is so easy ! Once I tried with leftover ratatouille with friends and to this day they still ask me to make some 😂 Also, after they are boiled, i cook them in a pan to make them crispy and it’s far more delicious this way

Heyy! From the Netherlands here. Really liked this recipe. It reminded me of a gnocchi i had here made from beetroot with a reduced beetroot sauce. Also a great vegan dish!

i love carrots. Since I started eating more veggies, I also noticed carrots are one of the better vegetables. Kind of like sweet potatoes, they are filling and just have a good taste.
