Delicious and easy to make No-bake Chocolate Mousse Cake.
It's vegan, gluten-free, and refined-sugar-free! The Mousse is super smooth and creamy.
Ingredients (6-7-inch)
CRUST
• 1 cup raw hazelnuts
• 7 pitted dates
• 2 Tbsp melted coconut oil
• 2 Tbsp cacao powder
• Pinch sea salt
• 2 Tbsp plant milk
MOUSSE
• 300g silken tofu
• 125g (vegan) dark chocolate (70%)
• 2 Tbsp coconut cream (sub full-fat coconut milk)
• 30ml maple syrup
INSTRUCTIONS
1. Line the bottom of a 6 or 7-inch cake pan with removable base with some parchment paper.
2. Add all ingredients for the crust to a food processor and process until evenly mixed. Press the mixture into the base of the cake pan, and smooth it out with a spatula. Set aside in the fridge.
3. Melt the chocolate over a double boiler.
4. Add all of the mousse ingredients to a blender and blend for a couple of minutes until smooth and creamy.
5. Transfer the filling into the cake pan. Place in the fridge to set for 3-4 hours (or overnight).
6. Once set, remove the cake from the pan.
👉🏼 If you don't like raw cakes, you can make the chocolate mousse in cups. A very easy and fresh vegan dessert.
