A far better reason is that the bottom is often harder than the top, ao its easier to cut with a knife than the soft compressable top.

If you let the bread knife do the work, you won’t flatten the top. You aren’t letting the bread knife do the work…

It will flatten the whole top while its tipped over its better to jsut cut top to bottom not bottom to top
