Today I made a batch of traditional Scottish rolls :) Also known as Scotch rolls, morning rolls (because traditionally they get delivered to the shops and sold in the morning) or in the West, we call them ‘Morton’s rolls’.

You’ll have noticed if you watch my meals of the week videos on a Sunday, we have soup & rolls quite often…and these are the rolls :) Absolutely delicious with an almost chewy texture and signature sandpaper top :) Fill these with whatever you would typically have in your sandwich…or simply have them with a generous scrape of butter!

What I used: Will make 10-12 rolls

800g (28 oz) Strong white flour
1 Teaspoon salt
50g (1.7 oz) Lard
500ml (15.5 oz) Lukewarm water
2 Teaspoons sugar
7g (0.24 oz) Fast acting yeast
Semolina or rice flour for dusting

Just a wee correction :D It should be 2 teaspoons of salt, not one x

Thank you for this recipe! My husband is Glaswegian, we have lived in the US for 10 years and he misses burnt rolls. I just made these for him and he was so happy! He said they are just like Mortons!

It's been 7 years since I've seen the shores of Scotland and my family there. I will be attempting these rolls just to take my spirit on a wee journey through my taste buds. And then I'll probably just go ahead and buy the plane ticket to get the real thing. :)

My family went on caravan holidays in the early to mid '70s to places like St Andrews and Dunbar. My mum would send me to the shop in the morning for 'well-fired rolls'. They were sold on big wooden trays. Thx for this memory.

I left Glasgow as a young lass of 18 immigrating alone to US in 1960 as a maid. Your video brought back such wonderful memories of me running around the corner early AM to the Bakery for a dozen rolls (Peacocks if I remember correctly) on Paisley Rd West (Ibrox) before heading off to work at British Polar Engines and I have never forgotten the wonderful taste of them with butter and Jam and my hot cuppa tea. And now after 60 yrs in the USA, at 79 have never lost my Glasgow accent. A little more subtle but definitely recognizable.

Cannot wait to try making my own Mortons rolls right here in Roseville, CA. THANKYOU, Cheryl, for a super video and bringing back those wonderful memories.

As Ive got older I’ve made more time for baking and cooking but can never seem to get the results I see on the instructions videos … until today !! 😳
I miss Scottish morning rolls terribly as I moved to England years ago and they don’t do them properly here, they’re all dense baps 😡… I got the ingredients and followed your instructions and timings to the letter and I now have 9 PERFECT rolls which I’m impatiently waiting to cool down to get intae them . Thank you SO much, I’ll be doing this regularly now and introducing my 2 daughters to the joys of pulling apart the rolls you want from the joined up ones . I’m aware I’m 2 years late to the party but a great recipe needs a great thank you - Thank you 🙏

Your buns brought back so many memories of going with my grandfather to the bakery in Glasgow every day with his dog, Chummy. I was 5 or 6 years old. They lived on Occle (?) Street and he and my Gran took us to Arran once. Unfortunately, I got terribly seasick.

I made a batch of these last week.
As an exiled Glaswegian in England for many years I still miss them!
Very easy to make and popped them loose into the freezer. We have had them several times already this week for lunch.

My partner made these. He is Scottish and has been missing them. The video came up on his utube and he woke up this morning and said he is making rolls. Such lovely dough. We’re in Saskatchewan Canada and they turned out amazing

I first tried your recipe over a year ago and it has become our favourite for yeasted rolls. Easy to make, tasty, visually impressive and they keep amazingly fresh. I make them most Saturday nights, fridge the shaped rolls and bake them Sunday morning. They are splendid! Thank you so much. 🥰

When both my husband and I were little, in the 1950’s, we had Dalziel’s rolls delivered to our homes every morning. The paper bag the rolls came in said “ A Good Roll Does Satisfy” and had a drawing of a horse rolling on its back. They were lovely.
