My amazing video series for cooking in Kefalonia on BBQ whilst on holiday. If you are watching a short, find the longer video for all the secrets.
All food was bought from the only Lidl store on the island and if you are taking a trip for a villa its worth spending a bit of time making the journey and stocking up. Their meats are good (for a supermarket) and reasonable prices. You can get everything you need, except charcoal so that needs to be sourced locally. Make sure you make a list as it's easy to forget.
My marinades are simply olive oil, herb packs mixed or oregano, with fresh garlic. The salads are dressed with similar, but I added fresh lemon juice and fig balsamic cream to some of them.
So easy to do on holiday but you need stock up at the start of the week.
The sausages are unusual for the UK but are lightly cured and the key is gentle heat to keep them juicy. I marinated the chicken overnight in Greek yogurt which tenderises and absorbs then protects meat as it cooks.
