I’m from Houma, LA... we catch and cook redfish allll the time. Solid job! Try simmering butter, fresh garlic, old bay and Tony’s seasonings, and basil together for about 20 mins, stirring frequently.
Based fish with butter mixture.
Season fish with salt, pepper, and cayenne.
Re-baste a few times while on the grill.

half shell is definitely the way to go, great video! ---just be careful dipping that knife that's touched raw fish back into the butter tub 😂

I used this recipe but instead of butter I used mayo, 10/10 would recommend!

Looks good, I seer the meat side first for 15 minutes to trap the moisture then finish it off scale side. Just another option, personally my favorite. Good job !!

Half on the shell with pico, avacado, and lime or lemon with corn or flower 🔥
I do it a very similar way, but ill definitely add butter to the scales next time. I also baste mine with warm butter/seasoning a couple of times before i flip, and after I flip

The red looks really nice - but - putting the knife back into the, "butter" after its been on the raw fish fillet? Time to toss the whole tub!

Wanna another EASY cooking recipe?
Filet with skin off.
Crushed jalapeño "Cheez-its"....
Make a "bed" of crushed Cheez-its in a 9"x13" glass pan.
Paint both sides of fillets in melted butter.
Put them on top of the bed. Cover the fillets with more crushed Cheez-its....
Bake in the over until white and flakey.
It's like fried fish without the grease and SUPER MESSY clean up. Kids really love it.
Can use sea trout, flounder, sheepshead, etc too.

So u can eat the skin people say to not it's bad but I wanna pan fry it or the Blackstone with real butter oil garlic and Cajun have trouble to know which fish u can eat with skin on

Knife spreads butter on raw meat then back in the butter container for more butter. Ewwww
