VEGAN CALZONES with Cashew 'Ricotta Cheese'

Try this easy vegan calzone recipe. The vegan ricotta style cheese is made with cashews and has a surprisingly similar texture to the real stuff. Don't worry waiting for the dough to rise is worth it... It's so good!

Ingredients

Calzone Dough
1 1/3 cups warm water
2 tsp yeast
1 tbsp sugar
415 grams flour
1 tsp salt
3 tbsp olive oil

Cashew "Ricotta"
1 1/2 cups cashews soaked for 2 hours in warm water
1/4 - 1/2 cup water (adjust according to preference in consistency)
1 tbsp lemon juice or apple cider vinegar
1 tsp garlic powder
1 tsp onion powder
2-3 tbsp nutritional yeast
salt and pepper to taste

Filling Ideas
Mushrooms, onions, spinach, bell peppers, olives, pineapple, hot pepper, herbs (basil, rosemary, thyme), pizza or marinara sauce*

*Sauce in the calzones is optional, we like to serve it with sauce on the side but it's also good in the calzones
