I've been using Khan in class and for homework for several years. Although I love the system, I almost always make "walkthrough" videos of the practice problems students will be doing at home. Sometimes the standard one worked example from Khan isn't enough to get them to understand, and the Khan videos don't actually spend much time "teaching" in a way that works if students have never seen the topic before.
That's just my recommendation.

Do we HAVE to make assignments? I want a set it and forget it curriculum, but I'd like to be able to skip over mastered skills. Is there a way to do this for homeschoolers? I can only figure out how to skip assignments by assigning EVERYTHING except the skills I know my kids/students have mastered.

does khan academy have the ability to auto fill into CANVAS gradebook for teachers? or do we still have to hand enter each score for each assignment? or is there a way to just enter the average they earned for each unit?
