I solely make tomato sauce in my cast iron pan. It comes out perfect every time and doesn't taste like pennies.

The good thing about this video is it made me search the topic of oil polymerization to form a seasoning on cast iron. The bad thing is, the chemistry of seasoning is not popularly known. Using the wrong oils and temperatures can lead to more or less acid resistant polymers. The core issue regarding the tomato sauce is the polymers can be dissolved off into the sauce but not fast enough to get to the iron. However, if the pan is not re-seasoned before the coating is gone the acid will get to the iron.

Great info sohla! I usually used to say hold my dosa while i destroy the pan 😅 i mean dosa batter also has lactic acid from fermentation. Perfect crisp dosas from well season pans

Acid is OK! alkaline solutions (like baking soda) are less ok becuase the more basic a solution is, the more likely it is to eat away at the seasoning.

This is the reason behind the “don’t wash your cast iron with soap” old rule: old soaps used to have high alkalinity because they didn’t have great methods of purifying the lye from the soap, and lye is an extremely potent alkali .

Anyway, who cares if it reacts? It’s iron. An essential mineral for your body. They sell iron fishes to leech iron into your food to make sure you get enough iron. If anything, cooking acid in a cast iron sounds like a good idea for an anemic like me.
