Here is a comparision after calculation -
Fletcher ----> 80 logs ----> 20 emeralds
Fisherman ----> 80 logs ----> 64 emeralds

For those in replies talking about inventory problems, mastering the villagers and other methods, here are the solutions ;-

1 - Other trades, probably require a lot of trading or zombie curing methods or iron farms or glitched string farms ( don't work on bedrock ) or result in loss compared to fisherman boat trade .
2 - Inventory management can literally be solved by a single chest, talking of you can't trade multiple boats at once, you can't do this with any other stackable item as well as the trades will run out .
3 - Max level, a fishing rod is enough for that, you even get better fishing rods while fishing ( like mending one that never runs out due to fishing xp ) . You can then trade the emeralds you got again with them to max them even faster or you can use a texture pack like trade unlocker lol .

4 - Other items are easier to collect than logs, seriously ? You jus have to plant 16 oak trees to get 80 logs or 64 emeralds . Just keep replanting them, not a big deal . Then about those annoying large oak trees, there are methods on youtube to only plant small oaks like placing a glass block one block side to the sapling on 2nd height .
