A few facts:
Every member of Scarlet and the Shakers is a chef in one of Papa's restaurants (with the 2 characters in Cheeseria, Marty from Burgeria, and Clover from Sushiria)
When choosing who becomes a chef, there's often a popularity contest for the next papa's chef, and Scarlet actually became a chef in the first papa's restaurant after her introduction.
Akari is the only character to be both a closer and later on a chef (as you saw, she was a closer it Taco Mia, but she's also a chef in one of the mobile games [Mocharia To Go])
In one of the mobile games (Cluckeria To Go) one of the debutant customers (the customers being introduced in that game) is canonically non-binary. Their name is Treble, and they also appear in Freezeria Deluxe, Paleteria To Go, and Pizzeria Deluxe.

I love how Papa Louie just surprise adopts people off the street to work at his restaurants. Though it brings into question if they’re employed or not before Louie forces them to do labor. Imagine having to call your boss and be like, “Sorry, I can’t come into work today, I have to make tacos and fail my perfect score by 2%.”
