Huevos Rancheros from Scratch!

Or just cook this food:

Huevos Rancheros

about 1 1/2 pounds of tomatoes
1 serrano chile
neutral oil or corn oil
a white onion, diced
4 eggs
corn tortillas
cheese, like queso fresco, if you desire

Place the tomatoes and serrano on a sheet pan and place it under the broiler. Broil, turning as needed, until blackened on the top and the bottom.

Once blackened, transfer to a blender and blend the tomatoes and serrano until rustically textured (for less spicy, remove the seeds form the serrano).

Place a pot over medium heat and add about 2 tablespoons of oil. Sautee the onions until just tender, then add the tomato mixture and fry it, seasoning it with salt. Let it simmer for about 5 minutes.

Place a skillet over medium-high heat and add about 1/8-inch of oil. Once it is shimmering, fry the tortillas on each side for about 5 seconds and then transfer them to a towel-lined plate.

Crack the eggs into the pan and cover them, cooking until the yolks are runny and the whites are set. Serve the eggs on plates over the fried tortillas, topped with ranchera sauce. Sprinkle with cheese if you desire.

Do chilaquiles next! When you find a restaurant that does them well, cherish those places. El Taco Riendo and Andale are my two favorites in the twin cities (you know, if you ever find yourself in the neighborhood). Congrats on the book! Glad to see there is a paperback version too!
