Have you ever heard of cheese with maggots?, Casu Martzu, literally translated as "rotten cheese", is a traditional Sardinian sheep milk cheese that contains live insect larvae. During production process, the base pecorino cheese is intentionally exposed to the cheese fly, which lay their eggs in cracks of the cheese. When larvae digest the cheese, they are making it much softer and giving it a creamy texture. Casu Martzu is typically consumed when the larvae are still alive and active in the cheese. Some people prefer to remove the larvae before eating, while others eat the cheese with the larvae still in it.
