INGREDIENTS
1/2 LB. ELBOWS COOKED (+ 1/2 TBSPN SALT FOR COOKING)
1 CAN (SWANSON) WHITE PREMIUM CHUNK CHICKEN BREAST (6 Ozs.)
2 STALKS OF CELERY (CHOPPED SMALL)
1 SMALL RED ONION (CHOPPED FINE)
1/4 GREEN BELL PEPPER (CHOPPED SMALL)
1/4 RED BELL PEPPER (CHOPPED SMALL)
1 TBSPN YELLOW MUSTARD
2 TBSPNS SUGAR
2 TBSPNS APPLE CIDER VINEGAR
1 1/4 CUPS MAYO
1/2 CUP MIRACLE WHIP
SEA SALT (TO TASTE)
FRESHLY GROUND BLACK PEPPER (TO TASTE)
PAPRIKA (GARNISH)
GREEN ONIONS (GARNISH)
DIRECTIONS:
BRING WATER TO A BOIL WITH 1/2 TBSPN SALT AND COOK MACARONI.
AS PER BOX INSTRUCTIONS. DRAIN IN A COLANDER AND SET ASIDE TO COOL.
PREP. DRESSING
IN A LARGE MIXING BOWL ADD THE MAYO, MUSTARD, SUGAR, VINEGAR, SALT AND PEPPER TO TASTE AND MIX WITH A WHISK TO WELL COMBINE.
ADD THE ONIONS, PEPPERS, CELERY, FOLD IN WITH A SPATULAR.
ADD THE CHICKEN AND FOLD IN GENTLY.
COVER WITH PLASTIC WRAP AND CHILL IN THE REFRIGERATOR WHILE MACARONI IS COOLING.
STIR IN MACARONI AND MIX WELL TO COMBINE.
TRANSFER TO A SERVING BOWL AND SPRINKLE WITH A LITTLE DUSTING OF PAPRIKA AND GREEN ONIONS.
